Smashed patty being scraped off the flat-top, lacy bronze crust with melted cheese and rising steam
Portland, OR Tue–Sun 11am–midnight

We grade every patty on its sear. Then we grade it harder.

Two brothers, one window, and a religious devotion to the brown crust. No apologies for char. No soft edges. No excuses.

The crust index

Zero is a steamed apology. Ten is the Maillard reaction doing its job.

Every burger on the board carries a 0–10 grade for how hard the patty is seared. Read the menu like a scorecard — and know we won't serve anything under a six.

0–5 · The apology zone

Pale, steamed, gutless. You won't find it on our board.

6 · Where we start

The softest we go. Bronze edge, still a little give.

10 · Fracture

Lacy, brittle, shatters when you bite it. The whole point.

After-dark window

The flat-top runs till midnight. So does the char.

Post-10pm the line thins, the grease deepens, and the scrape gets meaner. Same window, darker hour, harder crust. Order ahead and we'll have it bagged and bronzed.

FAQ

Questions we hear through the window.

Do you take reservations?

No tables, no reservations. It's a window. Order pickup online or walk up and we'll text you when your patty hits its sear.

Can I get a burger that isn't charred?

We won't serve anything under a crust index of six. If you want soft, order the brioche-soft chicken at index six and leave the deep char to the people in front of you.

Where do people park?

There's metered street parking on the block and a public lot one minute north. Pickup orders are quick, so a loading-zone idle usually works too.

Do you have anything for groups?

Yes. Orders over eight burgers go through the same pickup form, just give us a thirty-minute heads-up in the order note so we can stagger the flat-top.

Are there options for dietary restrictions or allergens?

We have a smashed mushroom patty and a gluten-free bun on request. Everything shares one flat-top, so we can't promise zero cross-contact with beef, dairy, or gluten.

What's the crust index, actually?

It's our 0–10 score for how hard a patty is seared. Zero is a steamed apology. Ten fractures when you bite it. Most burgers land seven to nine.
